Originating from Ukraine. This heritage wheat was originally known as Halychanka. It was a Scottish immigrant named David Fife who cultivated this wheat in Canada in the 1840’s and brought the Canadian agriculture into the world stage as a major exporter.
Red fife is a more robust and deeper flavor then modern wheat. Has a earthy nutty tone with a subtle sweetness that cuts the harsh bitter flavor you sometimes get with whole wheat flavors.
Uses: substitute one to one with any AP flour recipe. We really enjoy making red fife waffles, pasta and scones.
